Caramel flavours, whether salted or not, are IMO a versatile and essential flavour to have in one’s arsenal. Obvious pairings are for dessert, bakery and coffees, but caramels are also wonderful for tobacco and or blended alcohol mixes.

Overview

I don’t feel this is a stand-alone flavour but in terms of a caramel it’s extremely useful, and one of the better salted-umami flavours out there. It’s a rich, almost in your face type of flavour that has many applications, and even if caramels are not your thing, it probably belongs on your wish list.

Flavour Description – Notes

A fairly rich, slightly buttery, creamy butterscotch that seems like a fusion of caramels and light butterscotch, with a blend of syrup type topping; It reminds me of an ice cream type sauce. There’s also a maple syrup note as well.

 In terms of the salt, I’m on the fence. There’s certainly a compound of sorts offering a salt-like presence, but just can’t put my finger on it, let alone my tongue.
